Cod with Black Olive & Chilli Dressing

This is one of my favourite fish dishes! Danny actually made this for me ages ago- I think he got the idea from a Jamie Oliver recipe and I forgot about it until recently. Cod can be quite a bland Fish so this zingy flavoursome dressing really compliments it! 


Ingredients

1 Cod Fillet
8 Black Olives ( pitted )
2 Spring Onions
1 Red Chilli
2 Garlic Cloves
Handful of Parsley
Handful of Celery Leaves ( from the stalk) 
Splash of Olive Oil
1 TBSP Balsamic Vinegar
Juice of half of Lemon

Method

Place the cod in foil with a little coconut oil and rock salt. Wrap into a loose parcel and bake in the oven at 180'C for about 15 minutes. 

While that's cooking finely chop the Olives, Spring Onions, Chilli, Garlic, Parsley and Celery leaves and place into a bowl- stir and add a splash of Olive Oil, the Lemon Juice and the Vinegar. 

Once the Cod is cooked place on a plate and serve the Olive dressing on top. 

Serve with a baked Sweet Potato and Green Beans :)

More Lush Products...

Since my last blog post about Lush Products I decided to get myself some more bath time goodies.  This time I got myself the Rose Queen Bath Bomb and the Big Blue.....


As you all know I'm a big fan of the Rose Scent so was really looking forward to trying this one. Made with Rose Absolute from the Rose Damask Flower and sprinklings of Tiger lily, Apple Blossom, and Larkspur Petals which float on the top of the bath.  I have to say I was a little disappointed with the scent, It just wasn't very strong and It didn't stay on my skin afterwards. It looked pretty in the bath but I wouldn't buy this one again. 




The Big Blue smelt amazing!! The reason I got this one in the first place was I liked the sound of the ingredients. With Lavender Oil, Sea Salt and seaweed absolute making it rich in minerals and good for the skin. I also loved that it made the bath so blue! It reminded me of the sea. I felt so relaxed in this bath and the smell was so long lasting on my skin. There were strands of seaweed on the surface of the bath making me feel as though I was in the med. I loved this one and will definitely be buying it again. The smell lasting ages on my skin. I would highly recommend this!!

Summer Shopping...

I'm going through a " I want everything" phase at the moment. With the summer stock slowly coming into the shops I got tempted on another shopping trip recently. Here's what I picked up...and all
 for under £65!


New Look- Coral Bow Top- £14.99
This is really cute and looks lovely on. This will be good tucked into a pair trousers for work or teamed with jeans and flipflops for a summery daytime look. 


New Look- Gold Necklace- £5.99
I'm loving gold accessories! New Look have so much choice and they are so reasonably priced! 


River Island- Navy Lace Top- £20
I love lace so loved this as soon as I saw it! They had this top in a lovely Coral Colour too which I was so tempted to buy but am trying to be good so stuck to one. They also do this in Cream and Pink. I think it's a really good price for a going out top and cant wait for a reason to wear this. 


Influence- Coral Sandals- £20

I'm loving coral this Summer! These sandals will be perfect with nice bright toenails and a tan. I found these in a little shop in Loughton. They have some lovely little bits in there.

So these are the last few bits I'm going to buy for a while....PROMISE! x

Colour Therapy

We all have a natural reaction to colour for example a clear blue sky can make us feel at peace, a bright sunny day can make us feel happy!


 I'm really into Colour Therapy and believe that colour can effect our moods massively! I know myself that if I enter into a room full of bright colours it can change the way I feel immediately. This is why I try to bring a little colour into every aspect of my life. We all have a favourite colour, mine is Green! Even from a young age I was always attracted this colour- I have no idea why but this has stuck with me and as I've gotten older and learn't the significance of the colour I appreciate it all the more!

 Green is the color of balance and harmony. It is also the color of growth, spring, of renewal and rebirth. This is why there is so much of this color on the earth.
Green is an emotionally positive color, giving us the ability to love and nurture ourselves and others unconditionally. This pretty much sums me up...for all that knows me knows that I am a nurturer. I love to look after and care for people.  Green promotes a love of nature, and a love of family, friends, pets and the home.
It is also the color of prosperity and abundance therefore I believe that by wearing this colour it can attract these things into your life.
